Apple Cider Doughnuts

Ingredients

1 cup of apple cider
1 cup of granulated sugar
1/4 cup of shortening
2 large eggs
1/2 cup of buttermilk
3 1/2 cups of all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
vegetable oil or shortening for frying

Glaze
2 cups of confectioners' sugar
1/4 cup of apple cider

For the glaze - mix the sugar and cider. Dip the doughnuts while warm. Serve warm.
Or you can roll them in granualated sugar as pictured above.

Boil apple cider in a small saucepan until it is reduced to 1/4 cup about 8-10 minutes. Cool.
Beat sugar with shortening until smooth. Add the eggs and mix well. Then add the buttermilk and reduced cider.
Stir together the flour, baking powder, baking soda, cinnamon, salt, and nutmeg in another bowl. Add to liquid ingredients. Mix just enough to combine. Transfer the dough to a lightly floured surface. Pat the dough into a 1/2 inch thickness. Cut with a 2 1/2 to 3 inch doughnut cutter or you can make the dough into small balls for doughnut holes.
Add enough oil or shortening to fill a deep pan 3 inches. Heat the oil to 375 degrees. Fry several doughnuts at a time. Turn once or twice until browned and cooked through. About four minutes. Remove to paper towels. Then roll in granulated ugar or dip into glaze.
