This recipe was easy to make and tasted so good. I might have eaten it all for my dinner! The recipe can be found here.
Ingredients
1/4 cup of olive oil
2 teaspoons Italian seasoning
2 cloves of garlic, crushed
1 teaspoon of kosher salt
1/4 teaspoon of pepper
4 medium zucchini or squash, quartered lengthwise
1/4 lemon (I did not use this)
1/2 cup of freshly grated Parmesan cheese (I used store bought grated cheese. I also didn't measure and just put on as much as I wanted)
Directions
In a large ziplock bag place the olive oil, Italian seasoning, garlic, salt, and pepper.
Shake to mix together the marinade ingredients.
Put in the cut zucchini or squash and shake to toss with marinade.
Set aside for 15-30 minutes.
Preheat grill to medium high heat. Oil grate and grill zucchini about 3-5 minutes per side or until charred and cooked. Remove grilled zucchini to a baking sheet. Immediately squeeze with fresh lemon juice and sprinkle hot zucchini with Parmesan. (I cooked mine in the oven. I preheated it to 425 degrees. I cooked it for 10 minutes then flipped them. I continued cooking for another 10 minutes. Then I took them out and sprinkled the cheese on top. The cheese did not melt as much as I wanted so I returned it to the hot oven which was no longer on just to melt it.
