Melt in Your Mouth Pot Roast

This recipe can be found here. We really enjoyed this pot roast! I loved that I knew all of the ingredients going into the crock pot!


Ingredients
1 pound of medium red potatoes, quartered- I didn't use red
1 cup of fresh baby carrots
1 boneless beef chuck roast (3-4 pounds)
1/4 cup of Dijon mustard
2 teaspoons dried rosemary, crushed
1 teaspoon of garlic salt
1/2 teaspoon of dried thyme
1/2 teaspoon of pepper
1/3 cup of chopped onion
1-1/2 cups beef broth

Directions

  1. Place the potatoes and carrots in a crock pot
  2. Cut the roast in half.
  3. Combine the mustard, rosemary, garlic salt, thyme and pepper. Rub the mixture over the roast.
  4. Place in a crock pot; top with the onion and the broth.
  5. Cover and cook on low for 6-8 hours or until meat and vegetables are tender. Yield: 6-8 servings.
